National Chocolate-Covered Cashews Day
The problem with anything that has to do with cashews – they will get eaten before I get around to doing whatever it is I needed to do with them. In this case, chocolate white-chocolate covered cashews. Yum, but so are just plain cashews, so sorry for no picture, but at least taken consolation in the fact that I at least ate half of the food required for this day. If you are more strong-willed than I, here is what I was planning on making. Maybe you can get past opening the can….
White-Chocolate Covered Cashews
1 cup whole cashews
8 ounces white chocolate
- Melt the chocolate an a double-boiler or metal boiling set over a pot of barely simmering water. Stir in the cashews once chocolate is completely melted.
- Drop the cashew-chocolate mixture in rounded teaspoons on a baking sheet lined with wax paper. Let sit for 30 minutes before serving.
