National Coconut Torte Day

Coconut Torte

1 cup graham cracker crumbs (about 9)
1/2 cup sweetened coconut flakes
1/2 cup chopped walnuts
4 egg whites
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup sugar

  1. Grease a 9-inch pie plate and set aside.  Preheat oven to 350 degrees F.
  2. Combine graham cracker crumbs, coconut and nuts in a medium bowl.  Set aside.
  3. In another medium bowl, beat egg whites, salt and vanilla extract with a hand mixer until firm peaks. Gradually add sugar, beating until peaks are formed and all sugar is dissolved.
  4. Fold egg white mixture in to the graham cracker mixture.  Spread into the prepared pie plate and bake for 30 minutes. Serve pie cut pieces with ice cream.

This was a huge hit at our Saint Patrick’s Day potluck at work – there was one slice left to take a picture of!
