National Coconut Torte Day
1 cup graham cracker crumbs (about 9)
1/2 cup sweetened coconut flakes
1/2 cup chopped walnuts
4 egg whites
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup sugar
- Grease a 9-inch pie plate and set aside. Preheat oven to 350 degrees F.
- Combine graham cracker crumbs, coconut and nuts in a medium bowl. Set aside.
- In another medium bowl, beat egg whites, salt and vanilla extract with a hand mixer until firm peaks. Gradually add sugar, beating until peaks are formed and all sugar is dissolved.
- Fold egg white mixture in to the graham cracker mixture. Spread into the prepared pie plate and bake for 30 minutes. Serve pie cut pieces with ice cream.
This was a huge hit at our Saint Patrick’s Day potluck at work – there was one slice left to take a picture of!
