National Blueberry Popover Day


Blueberry Popovers

1 cup blueberries (frozen blueberries work well)
1 cup milk
2 tablespoons butter, melted
2 eggs
1 teaspoon 1 cup all-purpose flour
1/4 cup sugar
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 cup sugar
1 teaspoon cinnamon

  1. Preheat oven to 450 degrees F.  Generously butter a 9-inch pie plate and place berries on the bottom and set aside.
  2. In a large bowl, whisk together the milk, melted butter, eggs, and vanilla extract until combined.  In a medium bowl, combine the flour, sugar, nutmeg, and salt.  Slowly add the dry ingredients to the wet ingredients; mix batter until completely combined.
  3. Pour the batter over the berries in the pie pan.
  4. Combine 1/4 cup sugar and 1 tsp cinnamon together in a small dish.  Sprinkle 2 teaspoons of the cinnamon sugar mixture over on top of the blueberries and batter.
  5. Bake for 15-20 minutes at 450 degrees F then reduce the oven temperature to 350 degrees F and bake another 15-20 minutes.
  6. Cut into wedges and serve warm.
