National Poundcake Day


Olive, Ham, and Cheese Savory Poundcake
Adapted from What Are You Feeding Your Kids These Days

4 eggs
1 2/3 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup olive oil
1/2 cup beer
1 tablespoon Herbes de Provence
1/4 teaspoon cayenne pepper
Salt and pepper
5 slices Canadian bacon, diced
1 cup of green olives stuffed with jalapenos
1 cup Swiss cheese, shredded

  1. Preheat oven to 350 F.  Grease a 9 x 5 inch loaf pan and set aside.
  2. In a large bowl, whisk the eggs together.  Add the olive oil, beer, Canadian bacon, and olives ; mix well.
  3. In a separate medium bowl, mix the flour, baking powder, baking soda, Herbes de Provence, cayenne pepper, salt, and pepper.
  4. Add dry ingredients and cheese into wet ingredients; mix well.  Pour mixture into the greased loaf pan and bake for 1 hour in the preheated oven.  Poundcake will be done when a knife inserted into the center comes out clean.  Cool slightly on a wire rack before serving.
