National Hot Breakfast Month

Breakfast Potatoes

2 small potatoes
1/4 red onion, chopped
1/2 green bell pepper, chopped
2 tablespoons canola oil, divided
Salt and pepper
1 teaspoon minced, roasted garlic
1/2 cup cooked steak or lamb, chopped

  1. Place the potatoes in a pot and cover with water.  Bring water to a boil and boil potatoes for 10 minutes or until fork tender.
  2. When potatoes are cooked, cut into 1 inch cubes.
  3. Add 1 tablespoon of oil to a pan over medium heat.  Add onion and pepper and cook until slightly browned and soft.  Remove the onions and peppers from the pan.  Add the remaining oil to the pan and add the potatoes.  Sprinkle with salt and pepper.  Cook until the potatoes are browned.
  4. When potatoes are browned, add the garlic, cooked meat, onions, and peppers.  Heat through.  Serve potatoes with a fried egg.
