National Banana Bread Day


Banana Bread

1 cup sugar
1/2 cup butter (1 stick)
2 eggs
1 1/2 cup mashed bananas (3 or 4 whole bananas)
1 tablespoon lemon juice
2 cups flour
3 tablespoons baking powder
1/2 teaspoon salt
1 cup chopped walnuts

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, mix flour, salt, and baking powder.
  3. Cream butter and sugar with an electric mixer or a hand mixer.  Add eggs 1 at a time, beating well after each addition.  Stir in bananas and lemon juice.
  4. Add dry ingredients to the wet ingredients, mixing quickly.  Stir in nuts.
  5. Bake in 2 small, well-greased loaf pans for 45 minutes or until a toothpick inserted into the center comes out clean.
  6. Completely cool on a wire rack before removing the bread from the pans.

    Jack and I made banana bread this past weekend but added chocolate chips to it. I haven’t used lemon juice in mine, I’ll try that!
